This Kentish take on a New York classic has been created especially for the Brogdale Cider Festival, at which Comfy Rob from The Farmhouse will be hosting 3 cooking demos throughout the day - Saturday 19 September
Serves 4 People
ingredients:
120g celery peeled and thinly sliced
120g peeled apples sliced into matchsticks
Juice of half a lemon
50g sultanas
2 eggs
250ml olive oil
splash cider vinegar
First make your mayonnaise by slowly whisking 250ml olive oil into 2 lightly whisked eggs. add a splash of cider vinegar near the end then season to taste
Mix your celery and apple with the lemon juice and macerate for five minutes.
Then mix into other ingredients and top with the mayonnaise.
